Easy Baked Rice Pudding

This pudding is created with chia seeds instead of rice and has the comforting flavors of rice pudding without the carbs.

Instructions:

  • Preheat the oven to 375°F and lightly butter three 4-inch ramekins or one casserole dish (11 inch).
  • In a large mixing bowl, whisk together the first seven ingredients.
  • Pulse your chia seeds in a coffee grinder and add them to the cream mixture if preferred. Allow to settle for 10 minutes after whisking in the ingredients.
  • In a separate bowl, mix together the yolks one last time.
  • Bake for 40-45 minutes after pouring the ingredients into your dish(s).
  • Allow to cool for 10 minutes before serving, then refrigerate for 2 hours. Enjoy!
