Instructions:
- Preheat the oven to 375°F and spray a casserole dish with coconut oil spray if using one.

- Sauté the onions and mushrooms for 3-5 minutes, or until they are soft. Cook for 1-2 minutes, or until the spinach has wilted.
- Reduce the heat to medium-low and stir in the cream, cream cheese, mayonnaise, mustard, garlic, and cheddar cheese with a spoon until well combined.
- Season with salt and pepper and add the cooked and diced bacon, as well as the chicken. To blend, stir everything together.
- If you’re not using an over-safe cast iron pan, either move the entire contents of the skillet to a casserole dish at this time.
- Bake for 10 minutes, then broil for 2-3 minutes after topping with mozzarella cheese.
