I have been on a ketogenic diet for 6 months now and I have never looked back. Before giving this diet a try, I researched the pros and cons of hundreds of diets in the hope of finding something that I could really make a difference with. After all, the weight loss industry is as much a part of the food industry as it is a part of the health industry.

One-pan dinners, like this Chicken Casserole on a Keto Diet, are some of my favorites to prepare. They’re easy to throw together and clean up, and they always turn out delicious, no matter what you put in them! This one is laden with cheese, vegetables, and chicken, and it’s the ideal weeknight meal.
Meals in a Single Skillet
When you get home from work fatigued but still have a house full of hungry folks, making a one-pan meal is always the best option. No one will ever know you threw whatever was in the fridge into a skillet and cooked it up for dinner. Here are a few of my favorites:
Make Meal Preparation a Priority
This low-carb chicken dish isn’t just for weeknights. It’s one of my go-to meal prep dishes since it’s filling, reheats well, and pushes me to get through the first half of my work day.
You can make it on Sunday with your usual hard boiled eggs and fat bombs, then portion it out into containers so all you have to do in the morning is grab and go, then reheat for a lunch that will make your coworkers envious!
Place in the Refrigerator
When I say toss in the fridge, I’m not joking. Leftovers were the inspiration for this dish. We had leftover cooked chicken from the night before, as well as mushrooms and a large bag of spinach that neither of us intended to eat. Instead of throwing it away, I dumped it all into a skillet with any cheeses I had on hand and created this delicious keto chicken casserole. It’s possible for you to accomplish the same!
