When I say toss in the fridge, I’m not joking. Leftovers were the inspiration for this dish. We had leftover cooked chicken from the night before, as well as mushrooms and a large bag of spinach that neither of us intended to eat. Chicken Casserole on a Keto Diet

Chicken, bacon, parmesan, and mushrooms are combined in this hearty keto dish.

30 minutes to prepare

Instructions:

  • Preheat the oven to 375°F and spray a casserole dish with coconut oil spray if using one.
  • 1 tbsp coconut oil 1 tbsp coconut oil 1 tbsp coconut oil 1 tbsp coconut oil 1 tbsp coconut oil 1 tbsp coconut oil 1 tbsp coconut oil 1
  • Sauté the onions and mushrooms for 3-5 minutes, or until they are soft. Cook for 1-2 minutes, or until the spinach has wilted.
  • Reduce the heat to medium-low and stir in the cream, cream cheese, mayonnaise, mustard, garlic, and cheddar cheese with a spoon until well combined.
  • Season with salt and pepper and add the cooked and diced bacon, as well as the chicken. To blend, stir everything together.
  • If you’re not using an over-safe cast iron pan, either move the entire contents of the skillet to a casserole dish at this time.
  • Bake for 10 minutes, then broil for 2-3 minutes after topping with mozzarella cheese.
  • Serve right away!
  • It’s best to keep it in the fridge for up to 5 days in an airtight container.
