Thin Mints are definitely one of my favorite Girl Scout Cookies, and this low carb girl scout cookie recipe is a perfect way to satisfy that craving!

Cookie season is upon us, and with it comes the temptation to make your own version of Girl Scout Cookie Thin Mints. You could go the easy route and get the original recipe from the Girl Scouts, but instead of spending the money for the actual cookies, you can make your own for less.

Who can say no to keto baking, especially when it looks like this!

Do you miss the delicious peppermints from the Boy Scouts? Then you need to try this magical keto cookie that you can enjoy without worrying about lots of sugar!

My goal with this recipe was to create a waffle-like texture rather than a soft cookie core, to stay true to traditional Thin Mints.

If you like Thin Mints, just prepare to be surprised at how much this keto version tastes like the real thing! Plus, they’re super easy to make, have only one net carbohydrate per two cookies, and even impress the non-keto consumers in your family – I know, they fooled me!

Hip Tips:

    • You will notice that I used salted butter in my recipe, but unsalted butter works too. It’s a matter of personal preference!
    • I love these cookie sheets with a firm grip, making them perfect for little ones. You can flip the overcooked edge over to use the side with the clean round shape (that’s what I used for these little cookies). If you don’t have a round cookie mold, you can also use a small glass to cut out the same circle shape.
    • To prevent the dough from sticking, spread it out between two sheets of baking paper. So there is no need to add flour when rolling out the dough.
    • If the dough sticks or is too crumbly when you try to place it on a cookie sheet, you can try putting the rolled out dough in the freezer for an hour and then cutting out circles.

Cookie Keto Mint

Crunchy chocolate mint wafers coated in rich chocolate that taste almost identical to Girl Scout Thin Mints.

Chocolate wafer cookies:

  • 1 Mandelmehl Cup
  • 3 tablespoons unsweetened cocoa powder
  • 1/4 cup granules Swerve
  • 1 teaspoon vanilla extract
  • 1 teaspoon watermint extract
  • 3 tbsp. salty butter at room temperature
  • 1 egg
  • a pinch of salt

Chocolate coating:

  • 1 cup Schokoladenchips ohne Zuckerzusatz
  • 2 teaspoons coconut oil
  • 1/4 teaspoon mint extract

To make the wafer cookies, mix the flour, cocoa powder, Swerve and a pinch of salt in a large bowl.

Add vanilla extract, peppermint extract, melted butter and egg. Mix with a hand mixer until the dough forms a ball.

Wrap the dough in cling film and place in the fridge for 1 hour.

Preheat the oven to 350 degrees. Line a baking sheet with parchment paper and set aside.

Remove the dough from the plastic wrap and place between two sheets of parchment paper. Roll out the dough with a rolling pin to 1/4 thickness.

Cut the cookies into 1 1/2 round shapes. If you’ve ever tried Thin Mints Girl Scout cookies, you know they’re thin and crunchy, so the dough will be a little soft. Using a butter knife, carefully remove the cookie molds from the dough and place on a baking sheet lined with parchment paper.

Bake on the middle rack of the oven for 8 to 10 minutes. Because the cookies are small and thin, they don’t need much baking time – the longer they stay in the oven, the crunchier they will be, but be careful not to burn them!

Remove the cookies from the oven and let them cool on a baking sheet, then set them on a wire rack to cool.

For the chocolate glaze, place the chocolate chips, coconut oil and mint extract in a small saucepan over low heat. Melt the chocolate until smooth and creamy. Take it out of the oven.

Using tongs, dip the cookies into the melted chocolate and place back on the cooling rack. Once all the cookies are dipped, place them in the refrigerator until the chocolate coating hardens.

Store in an airtight container in a cool place. Have fun!
