Almond Ricotta Cookies – Low Carb! If you live a low carb lifestyle, you know it can be hard to get creative with those cupboard staples you’re forced to buy at the store. Everything seems to be made with flour, sugar, and/or refined oil. But that doesn’t mean you can’t get creative. You can make low carb cookies, cakes, muffins, and breads at home with almond ricotta.

Almond ricotta is a fantastic low carb substitute for ricotta cheese. In this recipe, we’re using 100% almond flour and almond ricotta to create a light and fluffy low carb cookie. The almond ricotta is a great way to make a low carb, healthy and non-processed ricotta cheese.

I love using my food processor to make quick breads, as I enjoy the texture that the almond flour produces. These cookies have a slightly crispy outside and a chewy inside, and are not too sweet. My almond ricotta cookies are a nice way to use up some leftover almond meal.

I’ve been doing most of my cooking recently, and these ricotta and almond biscuits are my most recent brilliant discovery. Because I’m allergic to hazelnuts, the worst thing about baking wonderful almond flour cookies is that I can’t taste them. Unfortunately for me, this means Matt will have to evaluate all of our cookies, but we can definitely trust his judgment more than mine! Before becoming keto, he ate a lot more sweets and snacks, and this is one of his favorite cookies!

This ricotta and almond cookie recipe is ideal for people who like simple sweets. Anyone who tries it is certain to succeed, since you can never go wrong with the simple method. I didn’t know how much I liked ricotta cheese until lately. I’ve always hated cottage cheese and lumped it in with other dairy products, but I was mistaken. Ricotta is a great filling for lasagna and creates a silky and delicious sponge cake. The greatest part about these cookies is that they are not only easy to make and tasty, but they can also be fully customized by adding spices or nuts. I’d probably replace the almond extract with maple extract and add chopped nuts for a maple nut flavor, but the options are limitless! These cookies are ideal for Christmas parties, workplace get-togethers, home get-togethers, and kids’ cookies (make sure to add a notice regarding almond flour for those with nut allergies)! These ricotta and almond biscuits are the ideal after-dinner treat, except for those with nut sensitivities.

Almond and Ricotta Cookies

Time spent: 55 minutes

  • Preheat the oven to 350 degrees Fahrenheit and prepare two baking sheets with parchment paper.
  • In a large mixing bowl, whisk together the melted butter, ricotta, egg, and extract.
  • Mix the almond flour, erythritol, baking powder, and baking soda together in a separate basin. In two parts, add the dry ingredients to the wet mixture and beat until well combined.
  • Place 18 to 20 equally sized cookies on baking pans using a cookie cutter. They should be somewhat flattened (as shown in our video about the recipe).
  • Preheat oven to 350°F and bake for 13-15 minutes, or until sides begin to brown. Remove them from the oven when the edges begin to brown and let them rest for 20-30 minutes before continuing; otherwise, they will break apart.
  • Score: They’ll melt in the oven if you push them too firmly or at all.
