To Make the Crust

In a food processor, combine all ingredients (except the oats) and process until smooth.

Note: If using a blender, mix all ingredients except the flour and oats until smooth. Transfer the contents of the blender to a large mixing basin and manually stir in the flour.

Lightly butter a 9-inch pie dish with coconut oil. Fill the pie dish halfway with batter. It’s important to keep in mind that the batter will be very doughy. Sprinkle the oats over the dough in small amounts and push it down with your fingers, moving it up the edges of the pie dish (the oats will help the dough from sticking to your fingers too much). Continue to flatten and smooth it out until it is equally distributed.

Preheat the oven to 350 degrees Fahrenheit and bake for 12-15 minutes.

To Make the Filling

In a microwave-safe bowl, place the coconut butter. Microwave on high for 10 to 20 seconds, or until soft. Fill your food processor or blender with the mixture. Rinse the butter beans well before putting them in a food processor or blender. With the exception of the garnishes, mix the remaining ingredients in a food processor or blender until completely smooth.

Note: When squeezing the juice from the lemon, strain it through a fine sieve to prevent the seeds from falling into the batter, or use a lemon juicer.

Pour the batter into the pie crust that has been prepared.

Before serving, chill for 6-8 hours.
